At the center of the experience is The Restaurant at INNESS, where Chef Gabriel Salazar brings a Mediterranean-inspired menu shaped by his global culinary background. Trained in Venezuela, refined in the Basque region’s three-Michelin-starred kitchens, and seasoned through years in celebrated New York restaurants, Chef Salazar’s cooking emphasizes open-fire techniques, seasonal produce, and locally sourced ingredients. His dishes—like Brie du Pommier with za’atar and whipped local honey, roasted squash and halloumi with romesco, and dry-aged New York strip with béarnaise—pair rustic simplicity with technical finesse, offering a dining experience that mirrors the resort’s blend of elegance and ease.
