Few restaurants in America can trace their roots to the founding days of the Republic, but Stissing House in Pine Plains, New York, does so with quiet confidence. Built in 1782 and once a gathering place for Revolutionary War figures, the building has undergone several reinventions over the centuries. Its most recent chapter began in 2022, when acclaimed chef Clare de Boer – known for New York City’s King in SoHo and Jupiter in Rockefeller Plaza – reopened the space as a refined, wood-fired tavern with a hyper-seasonal menu and Shaker-inspired design. Her vision, rooted in simplicity, seasonality, and warmth, has quickly made an impression: The New York Times named Stissing House one of the 50 restaurants in the U.S. it’s “most excited about right now.”

At the heart of Stissing House is a menu that changes with the Hudson Valley seasons. Dishes like seafood salad with seabeans and sumac, roast pheasant with vermouth and juniper, or a generous strawberry cobbler with chamomile ice cream reveal de Boer’s signature balance—elegant but unfussy, deeply nourishing, and always cooked over a wood fire. The wine list leans French and food-friendly, and the cocktails bring local flair, like the Pine Plains Martini infused with fir. Though dinner here feels celebratory, the space—anchored by a central hearth and candlelit dining rooms, retains a sense of rustic intimacy.
