Under Executive Chef Gabriel Salazar, the menu leans into handmade pastas, bright vegetables, and impeccably sourced fish and meats, many of them from local farms. Open-fire cooking is a defining element of Salazar’s approach, giving dishes like Brie du Pommier with za’atar and whipped local honey, roasted squash and halloumi with romesco, and a dry-aged New York strip with béarnaise a sense of warmth and elemental flavor.
