Lofty guest rooms, a communal bathhouse, galleries, a street-level market, and the subterranean nightclub Ether all share space with Ambos, the property’s open-fire restaurant and café. Led by chef Norberto Piattoni, Ambos brings an elemental, Argentine-inspired approach to local Hudson Valley ingredients—an anchor of warmth, craft, and community within the building’s original brick-and-timber frame. The column-free Gathering Hall accommodates up to 200 guests and opens onto an expansive porch overlooking the courtyard—ideal for tented events and seasonal gatherings. Ether, the subterranean club with a high-fidelity sound system, hosts up to 100 guests for parties and nightlife-driven activations. The adjacent Garden Lab, part test kitchen and part private dining room, offers an intimate setting for up to 25 guests. Restaurant Manor Rock
At the top of Hudson’s Warren Street, Restaurant Manor Rock offers a refined and quietly luxurious dining experience. Opened by partners Zack Nussdorf and Ivy Nallo, the restaurant showcases ingredients from their nearby farm in East Taghkanic, where they’ve spent years regenerating soil, raising animals, and growing produce with flavor and ecology in mind. Cocktails named after the farm’s animals add a touch of whimsy, while the wine list and zero-proof options reflect a serious commitment to craft. Rivertown Lodge is a 27-room independently owned hotel in the heart of Hudson, transformed from a 40-year-old motel that was once a historic movie theater. It's founders, the same team behind Camptown, collaborated with New York design studio Workstead and a team of local craftsmen to create a warm, design-forward space featuring custom brass lighting, handcrafted wood furnishings, and carefully curated artwork. Saint Florian
Saint Florian revives the spirit of classic supper clubs and roadhouses, bringing a sense of celebration back to dining out. Blending old-school hospitality with contemporary flavors, the restaurant offers an ever-changing menu inspired by classic American fare and Continental cuisine. The restaurant is split into two distinct experiences. Suarez Family Brewery
Suarez Family Brewery is a true mom-and-pop operation tucked into a former 1930s lamp factory along Route 9 in Livingston, New York—technically the middle of nowhere, but geographically, within the bounds of Hudson, NY. Brewer-owned and operated by husband-and-wife team Dan Suarez and Taylor Cocalis, the brewery has become one of the most respected small producers in the country, known for “crispy little beers” that favor nuance over noise. Expect unfiltered lagers like Palatine Pils, easygoing pale ales such as Crispy Little, and mixed-fermentation country beers that lean into local fruit, herbs, and subtle oak. The focus is on moderate-alcohol, highly drinkable beers that feel as good as they taste—Suarez is almost obsessive about texture, balance, and a clean, refreshing finish.
With its new taproom, Suarez says the space is where "old-world soul meets hacienda warmth, crafted to feel timeless, communal, and alive. Just like the beer." On tap is a tight selection of draft and cask beers—think pilsner, pale ale, smoked lager, and an old ale on cask—alongside a small bottle list of mixed-culture country beers conditioned with cherries, crab apples, and other seasonal fruit. Well-behaved dogs on leashes are welcome on the outdoor patio and lawn, and in addition to a small curated selection of snacks, guests are encouraged to bring their own food or time their visit with an occasional food pop-up.
The bottle shop keeps the same hours as the taproom, so you can stock up on beer to go after a tasting. With its sun-drenched interior and gentle hum of families, locals, and beer pilgrims often from further afield, Suarez Family Brewery feels less like a stop on a beer trail and more like a small, intentional world of its own—one built around family, craft, and a deep love of beautifully made lager and farmhouse-style ales.

The Hereafter
Tucked unassumingly on Columbia Street in Hudson, The Hereafter is an intimate cocktail lounge that blends timeless design with meticulous attention to detail. Created by veteran bartender Jeremy Dubroff and actor Isi Laborde, the space was transformed by designer Christian Garnett into a warm, European-inspired haven featuring white oak floors, a walnut bar top, glossy green tiles, and vintage furnishings sourced from around the world. The bar’s concept is rooted in exploration and transformation, with cocktails thoughtfully organized by mood—Fun, Classy, Eccentric, or Deep—each crafted with house-made tinctures, infusions, and unexpected flavor combinations. Complementing the inventive cocktails is a small but ambitious menu by chef Michele Hunter, formerly of Hamlet & Ghost in Saratoga Springs. The Maker Hotel
