Saint Florian

The restaurant is split into two distinct experiences. Silo Bakery
The Silo Bakery in Amenia brings a touch of French artistry to the Hudson Valley with its handcrafted pastries, breads, and pies made from scratch using local ingredients. Opened Summer 2025, the bakery has quickly become a neighborhood, serving seasonal baked goods and Illy Café coffee. Part of the Silo Ridge Field Club, a Discovery Land company, Silo Bakery extends the club’s commitment to quality and connection into the heart of Amenia.
At the helm is renowned pastry chef Thomas Croizé, whose training in France, Monaco, and New York informs a menu that blends tradition with creativity. Guests can enjoy classics such as chocolate croissants made with single-origin chocolate, alongside hearty lunch offerings like soups and sandwiches served on house-baked breads. Gluten-free selections and custom cakes ensure there’s something for every taste.
Silvia
Silvia is a family-owned restaurant in Woodstock, New York, dedicated to connecting food and people through honest, sustainable cooking. Since opening in 2017, Silvia has embraced a back-to-basics approach, featuring a wood-fired grill and a pantry stocked with locally sourced, organic ingredients. Sorry, Charlie
Sorry, Charlie is a welcoming cocktail bar in Kingston, blending expertly crafted drinks with house-made pan pizza in a laid-back setting. Created by the team behind Goodnight Kenny, the space features a cozy bar, communal seating, and a menu of creative cocktails, local beers, and bar snacks.

Stissing House
Few restaurants in America can trace their roots to the founding days of the Republic, but Stissing House in Pine Plains, New York, does so with quiet confidence. Built in 1782 and once a gathering place for Revolutionary War figures, the building has undergone several reinventions over the centuries. Its most recent chapter began in 2022, when acclaimed chef Clare de Boer – known for New York City’s King in SoHo and Jupiter in Rockefeller Plaza – reopened the space as a refined, wood-fired tavern with a hyper-seasonal menu and Shaker-inspired design. Her vision, rooted in simplicity, seasonality, and warmth, has quickly made an impression: The New York Times named Stissing House one of the 50 restaurants in the U.S. it’s “most excited about right now.”
At the heart of Stissing House is a menu that changes with the Hudson Valley seasons. Dishes like seafood salad with seabeans and sumac, roast pheasant with vermouth and juniper, or a generous strawberry cobbler with chamomile ice cream reveal de Boer’s signature balance—elegant but unfussy, deeply nourishing, and always cooked over a wood fire. The wine list leans French and food-friendly, and the cocktails bring local flair, like the Pine Plains Martini infused with fir. Thai Baan
Thai Baan brings the vibrant flavors of Thailand to the heart of the Hudson Valley. Created by husband-and-wife duo Jason Jeffords and Chef Arunee “Runie” Pakaraphag, the restaurant is rooted in Runie’s upbringing on a rice farm in northeastern Thailand and her two decades of culinary experience abroad. The Thai Baan menu balances beloved staples like pad Thai, green curry, and veggie spring rolls with bolder dishes such as Massaman short rib curry and fiery pork stir-fry. With every plate, Thai Baan delivers food that is both authentic and deeply personal, crafted to evoke the warmth of home cooking while embracing the seasonal bounty of the Hudson Valley.
Located inside Tenmile Distillery in Wassaic, Thai Baan serves dinner Thursday through Sunday, with lunch and brunch on weekends. Together, the distillery and restaurant create a destination unlike any other in Dutchess County, where exceptional spirits and authentic Thai food come together under one roof.

The Aviary
The Aviary, an Upstate New York gathering place, specializes in ingredient-focused Asian-inspired cuisine, with seasonal ingredients sourced from our local farms and purveyors. Our restaurant resides under the soaring roof of the historic Kinderhook Knitting Mill in the village center of Kinderhook. Chef Robert Howay works closely with our Hudson Valley farmers to produce an eclectic and ever-evolving array of dishes and the Aviary bar features our own speciality cocktails and curated wine list.
The Aviary's elegant and intimate lounge space, The Nest features a mural painting by KKM co-owner, artist Darren Waterston. An inviting spot for a pre-dinner drink or quiet dinner for two, The Nest can also be reserved for cocktail parties of up to thirty people or seated dinners of up to twenty guests.
The Cliff House
Opening in June, The Cliff House is the culinary centerpiece of Prospect, offering a warm, welcoming space to gather, dine, and take in sweeping views of Lake Prospect. Operated by the renowned Mezze Hospitality Group, The Cliff House features ingredient-driven menus inspired by the region’s farms and changing seasons, delivering a fresh and thoughtful dining experience rooted in nature.

The Dandelion
Dandelion at Eastwind Oliverea Valley is a cozy restaurant and bar inspired by the warmth and charm of aprés-ski culture, offering a welcoming retreat with its hearth and intimate corners. Helmed by co-founder and F&B director Daniel Cipriani, the menu focuses on impeccably executed, international comfort food, featuring standout dishes like Thai-style coconut cream soup and dry-aged pork chops, as well as impressive craft cocktails like the Paloma and the gin-based Foghorn.
Embracing the hotel's philosophy of relaxation, Dandelion enhances the experience with a breakfast basket delivered to rooms each morning, brimming with fresh pastries, muesli, fruit, yogurt, eggs, coffee, and juice. This thoughtful touch encourages guests to linger in the comfort of their rooms, creating an atmosphere of ease and indulgence that lasts throughout the morning.
The Feathers Tavern
The Feathers Tavern, nestled within The Six Bells Countryside Inn in Rosendale, NY, is more than just a dining room—it’s the heart of the inn’s communal experience. With only 18 tables, the tavern feels intimate yet lively, welcoming guests into a richly decorated space that blends vintage charm with playful sophistication. Designed to reflect the same imaginative spirit that defines the inn, The Feathers features cozy red-cushioned corners, floral wallpaper, custom banquettes, and a sunroom-like space that invites lingering over a meal or cocktail. Seasonal menus are crafted in collaboration with consulting chef Molly Levine and head chef Larkin Young, featuring inventive yet comforting takes on classic American fare.
Guests begin their day with a complimentary European-style breakfast of soft-boiled eggs, smoked trout, and locally sourced meats and cheeses—served with thoughtful touches like coffee waiting for early risers. The evening menu is equally thoughtful, with standout dishes such as chilled buttermilk cucumber soup, oven-poached hake, roasted chicken, and corn fritters with fried sage. Creative cocktails, including the house favorite Golden Slipper, round out the offering. The Feathers also extends its experience outdoors, with a deck overlooking the Rondout Creek—perfect for seasonal dining under the open sky. The Fed of Warwick brings an unexpected grandeur to Main Street, transforming a historic 19th-century bank into one of the Hudson Valley’s most striking dining rooms. Beneath soaring, meticulously restored ceilings and flanked by original vault doors, the space blends Art Deco elegance with the warmth of a neighborhood gathering place. Led by veteran NYC restaurateur and Warwick local Michael Tzezailidis, the bar and grill weaves his Greek heritage into a playful menu that ranges from zucchini fritter balls and mini souvlaki to seafood-packed Pasta Santorini and protein-topped Hellenic Frites. Every meal begins with scratch-made mini pitas—an early sign that hospitality is taken seriously here.
Settle into a butter-soft leather banquette or grab a seat at the bustling central bar, where wood barrels hint at the cask-aged cocktails to come. The drink list leans inventive, from aged Negronis and bourbon Old Fashioneds to Beertails that shake IPA or pale ale together with spirits for something unexpected. While Greek flavors anchor much of the experience—think eight-hour braised octopus or deconstructed moussaka—there’s plenty for those who prefer a classic smash burger or fried chicken sandwich. Brunch brings its own charms, including feta omelets and fluffy Greek-yogurt pancakes.
What makes The Fed especially memorable is how seamlessly it pairs big-city sophistication with small-town warmth. Tzezailidis preserved the building’s bones wherever possible, restoring its dramatic ceiling and reimagining the vaults as design elements and lounge entrances. Opened during the buzz of Applefest weekend, the restaurant has quickly become a beloved local destination—one that honors the past while offering a fresh, spirited take on modern dining.
The Kaatskeller
Under the shade of the Catskill trees, Kaatskeller beckons with the siren call of wood-fired aromas and the lively chatter of patrons sharing moments over artisan pizzas and locally crafted drinks. This Livingston Manor gem transforms dining into an experience, where the rustic charm of the surroundings melds seamlessly with the modern sensibility of its culinary offerings.
Step into a world where the crackle of the fire becomes the soundtrack to your meal, and every dish is a testament to local flavors. The open-air courtyard, a delightful showcase of nature's beauty, invites guests to linger over vibrant salads and inventive small plates that highlight the bounty of the Hudson Valley. The Lantern Inn
The Lantern Inn in Wassaic is a historic community hub reimagined as a family-friendly restaurant known for its wood-fired pizzas, ramen, and inventive seasonal dishes. Housed in a 100-year-old former tavern and pool hall, the restaurant blends old-time character with a fresh, farm-to-table approach. Inside, the cozy space is filled with wood-paneled walls, vintage posters, and a lively bar that has kept one Budweiser tap running for over four decades. Outside, a gravel garden patio strung with lights and dotted with picnic tables and fire pits creates a welcoming space for families, neighbors, and visiting artists from the nearby Wassaic Project.
Led by husband-and-wife team Minh Le and Erika DaSilva, The Lantern Inn has become both a culinary destination and a true gathering place. Their collaboration with chef Johnny Dearth, formerly of Michelin-starred Faro in Brooklyn, has elevated the menu with house-made pastas, grain-focused breads, and creative takes on seasonal vegetables alongside staple burgers and pizzas. Sourcing ingredients from local farms like Maitri Farm and Harlem Valley Homestead, the kitchen emphasizes simplicity with a touch of refinement, while the beverage program showcases small-production wines, Hudson Valley craft beers, and bespoke cocktails crafted on request.
What makes The Lantern special, however, goes beyond the menu. It’s a place where locals and newcomers alike gather, bridging generations and communities in a casual, unpretentious setting. Whether sharing oysters and pizza in the garden, sipping craft beer at the bar, or exploring the arts-and-food pop-up Wassaic Newsstand next door, guests quickly find that The Lantern is more than a restaurant—it’s a cultural anchor in Dutchess County that celebrates both good food and community connection.
The Prospect Restaurant at Scribner's
